St. Patrick’s Day may only be one day out of the year, but I feel the minute the calendar flips its page to the month of March, plans for this popular holiday gets underway. While there are plenty of unhealthy ways to enjoy the spirit of this “global” celebration, if you’re looking for more of a guilt-free alternative, you’re in luck! Below I’ve listed some great recipes for healthier (non and alcoholic) choices to quench your thirst when taking part in this Irish Fest!
NON-ALCOHOLIC LIQUID REFRESHMENTS:
Mint-Chocolate Green Protein Smoothie-Because who doesn’t love a great protein shake that tastes like America’s favorite Girl Scout Cookie, or a great detox post-St. Patty’s Day celebrating? (from: Nutritionistinthekitch.com)
- 1 scoop of your favorite protein powder
- 1 tbsp of ground flaxseed
- 1 banana (frozen and chopped)
- 1/2 cup of fresh or frozen spinach or even substitute for Kale
- 1/4 tsp of pure peppermint extract
- 3-4 ice cubes
- 1/4 cup unsweetened almond milk
- 1 tbsp of pure dark chocolate chips
Blend all ingredients, except the chocolate chips until you get a thick consistency. If you prefer a thinner texture, just add more almond milk.
Pour into a cup and garnish with your dark chocolate chips. Enjoy!
Kiwi-Coconut Smoothie-Satisfy your hunger before heading out to celebrate with this delicious spin on your typical “Plain Jane” smoothie (from: foodwhine.com)
- 1 can of full fat coconut milk
- 1 tbsp of honey
- 1/2 tsp of vanilla extract
- 4 small kiwis
- 1 frozen sliced banana
- a handful of spinach
- 1/2 cup of vanilla yogurt
Start with making the whipped topping. Skim any cream off of the top of the can of coconut milk. Set the liquid milk aside to use in the smoothie
In a bowl, combine the coconut cream, honey and vanilla. Whip with a blender or hand mixer.
Place bowl in the freezer to keep it chilled, while firming it up as you make the rest of the smoothie
As for the smoothie, cut the kiwi in half and scoop out the fruit into a blender. Add remaining ingredients and blend until smooth.
If your smoothie needs more taste, add a little more honey, and blend again.
Pour into shot or rocks glasses and top with whipped coconut cream.
Green Tea with Lime Spritzer-With the warmer months, most of us start to crave a cold iced tea to help refresh and revitalize (from: thefoodinmybeard.com):
- 1 box of green tea bags (for multiple servings)
- 3 cup of water
- 2 tbsp of honey
- 1/3 cup of lime juice
Heat the water with the tea bags, until it starts to simmer. Remove from heat and let it steep at room temperature for an hour. Then add the honey while the tea is still warm, and stir until it dissolves. Remove the teabags, and let it sit in the fridge until it chills. Add lime juice.
When you’re ready to drink it, fill your glass with ice, 1/2 cup of the tea and then top it off with soda water and a slice of lime.
Shamrock FroYo Shake-This is a healthier alternative to the typical milkshake that you can share with your kids as a fun treat!
- 1 pint (two cups) of Greek Frozen Yogurt
- 1 cup of almond milk
- 1/2 tsp. of pure peppermint extract
- 1/4 tsp of green food coloring (20-25 drops)
- Whipped cream and sprinkles can be a fun additive when garnishing
Blend ice cream, milk, peppermint extract and food coloring, until smooth.
Pour into glasses and top with whipped cream and sprinkles if desirable (and in most cases it will be with the kiddos!).
ALCOHOLIC LIQUID REFRESHMENTS-
The Irish Isle-If you’re a lover of a great mojito, try this 84 calorie cocktail:
- 1 part vodka
- 2 parts refine Mojito Mix
- splash of club soda
- 2 tsp. of muddled cucumber
Mix 2 oz. of vodka and 1 oz. of refined Mojito Mix. Shake and strain into a glass, then splash with club soda and garnish with lime. For added taste, muddle a few cucumbers, pour into a glass, and ENJOY!
Midori’s Shiny Shamrock–If you’ve got a sweet tooth, but want to indulge guilt free, try this two-ingredient cocktail for less than 150 calories:
- 1/2 ounce of Midori Melon Liqueur
- (dry) Champagne
Pour 1 to 2 tbsp of Midori mix into a champagne flute and then add your champagne!
Leprechaun Leap–For under 100 calories, try this refreshing carbonated cocktail with a touch of vodka, for some more guilt-free indulgence!
- 4 oz. of kiwi strawberry Sparkling ICE
- 1 0z. of Stoli Vodka
- Splash of one squeezed lemon
- Splash of white cranberry juice
Stir all ingredients gently and then pour into a champagne flute, garnished with your favorite green fruit and enjoy!
